Shirley's Sweet Potatoes by Dave Jordan


1 stick of salted sweet cream butter
2 40 oz. cans of yams (drained)
1/2 cup of brown sugar
1/2 10.5 oz bag of marshmallows (miniatures work great)


Melt stick of butter in skillet. (A cast iron skillet works great.)

Add sweet potatoes. (Make sure they are drained.)

Cook on medium heat ten minutes, stirring occasionally.

Stir in brown sugar and marshmallows.

Turn heat down to low and cook for 15 minutes, stirring occasionally. (Scrape the bottom of the skillet every once in a while to keep them from burning.)

These taste even better heated up the next day. Have a great holiday!
