Marvin Daugherty’s Russian Tea Cakes
My recipe came from a lady who lived next door to us in Jacksonville, NC in the late 1970s, so we've had the recipe for about 35 years! Online recipes for tea cakes are virtually the same. Enjoy!
1 cup softened butter
1/2 cup powdered sugar
21/4 all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla
3/4 cup chopped nuts
Mix butter and sugar in a bowl then stir in vanilla. Then stir in flour and salt. Lastly, stir in chopped nuts.
Form into small balls then place them slightly apart on a cookie sheet. Bake at 400° for about 11 minutes. Roll the balls in additional powdered sugar when slightly cooled. Allow them to cool for an hour or so then serve.
Makes about 20 cakes.
