Hot Cider Wassail

Wassail is a salutation or toast given in drinking to someone's health or as an expression of good will at a festivity. It is also the drink used in such toasting, commonly ale or wine spiced with roasted apples and sugar.

Ingredients

  • 3 oranges
  • 3 lemons
  • 1 oz. cinnamon sticks
  • 1 tbl. ground allspice
  • 1 1/2 quarts water
  • 1 1/2 cups granulated white sugar
  • 1 gallon cider

    Directions

    1.) Squeeze juices.

    2.) Put rinds and spices in a pan.

    3.) Add water, cover and simmer 2 1/2 hours. Strain over sugar, add juices and cider.

    4.) Heat but do not boil.

    5.) Serve hot.
