2 cups elbow macaroni
2 cups milk
1/2 tsp salt
1/2 stick margarine
4 tbl. white wheat flour
1 lb. grated cheddar cheese–medium sharp
crushed saltine crackers
Makes 2 quarts (Serves 6 to 8).
1.) Cook macaroni according to directions on package and drain.
2.) Add milk, flour, salt and pepper to beaten eggs.
3.) Melt and stir in margarine. Place alternating layers of grated cheese and macaroni in buttered baking dish.
4.) Pour milk and egg mixture over all.
5.) Mix cracker crumbs with a small amount or melted butter and sprinkle over casserole.
6.) Bake at 375° approximately 30 minutes or until browned on top.
