Marvin's Mom's Carrot Cake

I’m bringing out one of my all-time holiday favorites. Mom baked this goodie at Thanksgiving and Christmas each year when I was a child. As our children grew up and visited grandma at special times of the year, they also took the opportunity to save room for this irresistible dessert.

Ingredients

Mom's carrot cake ingredients:


  • 2 cups sugar
  • 1 cup oil (crisco or wesson oil)
  • 4 eggs
  • 1 tsp. vanilla
  • 2-1/4 cup self-rising flour
  • 1-1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 2 cups grated carrots

  • Cream cheese icing:


  • 1 stick butter or margarine
  • 1 10-ounce package cream cheese
  • 1 box powdered sugar
  • 1 tsp. vanilla
  • 1 cup nuts


  • Directions

    Mom's carrot cake directions:


    1. Mix sugar, oil, eggs, and vanilla.
    2. Add slowly the flour, baking soda, and cinnamon which have been sifted together.
    3. Fold in the carrots.
    4. Bake at 350 degrees for 20 to 25 minutes.

    Makes two 9-inch cake layers. Let cool and frost with cream cheese icing.


    Cream cheese icing directions:


    1. Beat shortening and cream together.
    2. Add the sugar gradually.
    3. Add vanilla and nuts.
    4. Mix well and spread over cake.
