Marvin's Mom's Carrot Cake
I’m bringing out one of my all-time holiday favorites. Mom baked this goodie at Thanksgiving and Christmas each year when I was a child. As our children grew up and visited grandma at special times of the year, they also took the opportunity to save room for this irresistible dessert.
Ingredients
Mom's carrot cake ingredients:
2 cups sugar
1 cup oil (crisco or wesson oil)
4 eggs
1 tsp. vanilla
2-1/4 cup self-rising flour
1-1/2 tsp. baking soda
1/2 tsp. cinnamon
2 cups grated carrots Cream cheese icing:
1 stick butter or margarine
1 10-ounce package cream cheese
1 box powdered sugar
1 tsp. vanilla
1 cup nuts
Directions
Mom's carrot cake directions:
- Mix sugar, oil, eggs, and vanilla.
- Add slowly the flour, baking soda, and cinnamon which have been sifted together.
- Fold in the carrots.
- Bake at 350 degrees for 20 to 25 minutes.
Makes two 9-inch cake layers. Let cool and frost with cream cheese icing.
Cream cheese icing directions:
- Beat shortening and cream together.
- Add the sugar gradually.
- Add vanilla and nuts.
- Mix well and spread over cake.
