A local restaurant is serving up its famous food at Pinehurst this week after being chosen as one of the official caterers of the US Open Golf Championship.
The tournament's main caterer is a Maryland company that wanted to put authentic Eastern North Carolina barbeque on the menu. After numerous visits and months of consideration, Parker's Barbeque in Greenville was chosen to supply all of the BBQ served up at the tournament.
Co-Owner Billy Parker says he and his staff cooked over 70 pigs to produce more than 3,500 pounds. Parker's is also supplying hundreds of gallons of Brunswick Stew and slaw as they attempt to feed over 18,000 hungry golf fans.
Parker says he thinks his traditional approach to cooking is what helped his restaurant earn the honors.
"Whole hog vinegar-based barbecue is the best barbecue. Not only in North Carolina but in the country. So there's very few places that do it that way anymore and we're one of them," said Parker. "We were certainly proud to be chosen to provide the barbecue to the US Open."
Parker says it was the largest single order his restaurant has ever filled in its nearly 45-year history.
