Jan Czaykowski - Co-owner Fred & Claire's Restaurant
17:10 people come into see us, a lot of people know each other, they move from booth to booth, have even had couples push the tables away and dance to Dean Martin and Frank Sinatra for an occasion. We just do what our customers want.
AND MOST CUSTOMERS WANT GOOD FOOD... WHICH THEY ALWAYS GET.
18:06 we star our adventure, our tastings here at Fred and Claires with a crab and lobster bisque soup. So lets see how it is... Oh that's good. If you like bisques especially seafood bisques, this is amazing. The crab and lobster go so well together.

AN AMAZING EXPERIENCE FOR A GOOD PRICE. NEXT UP IS CHEF BRUCE, AND HIS ITALIAN BISTRO... WHERE THE FOOD IS FLAVORFUL TO SAY THE LEAST.
Chef Bruce Thomas - Owner, Chef Bruce
26:05 in an italian family, you call your tomato sauce, instead of marinara sauce, you call it gravy. Its a thicker sauce. and that's the home style part of it. The flavors are more vibrant. There's not a lot of spices used in the food. The food is allowed to come through naturally.
SO, SINCE I'M WILLING TO TRY ANYTHING, WE TRY ESCARGOT FOR AN APPETIZER... THAT'S SNAILS COOKED WITH BUTTER, MUSHROOMS AND A FLAKY PASTRY.
33:26 that's good, the butter, the pastry.... um.
AND THE ENTREE, SHRIMP CORSIAN.
35:59 there are so many flavors, this spices, the seasonings, the cheese, the shrimp, the pasta. There's so much going on in your mouth. Its very good.
AND YOU HAVE TO HAVE A CANNOLI FOR DESSERT.
38:18 I probably should use silverware but I've seen people eat them with their hands and that's how I'm going to do it.
AND ITS THE PERFECT ENDING TO A GREAT MEAL... YOU GET SALAD AND BREAD FREE WITH YOUR MEAL. THE ESCARGOT WAS 7-95, THE SHRIMP CORSIAN WAS 18-95 AND THE CANNOLI WAS 4-50 FOR A GRAND TOTAL OF 31-40. A WONDERFUL ITALIAN MEAL. FINALLY WE TAKE YOU TO THE CHELSEA IN DOWNTOWN NEW BERN RUN BY TWO BROTHERS AND THEIR WIVES... ONE BROTHER UP FRONT, ONE BROTHER IN THE KITCHEN.

8:25 get the full flavor, the full effect, the shrimp, the grits, the bacon, the tomatoes, the scallions, and the sauce. ... that is heavenly, you have to try this.
AND IT CONTINUES... ONE OF THE BEST DISHES I'VE EVER HAD... SOUTHERN OSSO BUCO.
10:30 you don't need a knife for this meal, it literally comes right off on your fork. everything... you're garlic smashed potatoes, you're steamed vegetables, ALL you need is a fork... i could eat this everyday..
10:00 holy cow... I should say holy pork.
AND THE MEAL ENDS FLAWLESSLY WITH A CREME BRULEE WITH SWEET CREAM AND FRESH FRUIT... THE SHRIMP AND GRITS WERE 8-50, THE OSSO BUCO WAS 19-95 AND THE CREME BRULEE WAS 6-95 FOR A GRAND TOTAL OF 35-40, BUT THAT TOTAL PALES IN COMPARISON TO THE MEAL WE JUST HAD.
