No-Fry Honey Chicken

1 cup honey
2 cups cornflake crumbs
1 (2-1/2- to 3-pound) chicken, cut into 8 pieces and skin removed
Salt
Black pepper

Preheat oven to 350°F. Coat a rimmed baking sheet with nonstick cooking spray.

Place honey in a shallow bowl. Place cornflake crumbs in another shallow bowl.

Season chicken with salt and pepper. Dip chicken in honey then cornflake crumbs, completely coating the chicken each time. Place chicken on baking sheet.

Bake 55 to 60 minutes, or until golden and the juices run clear.

NOTE: Check out the honey section of your supermarket. Each different kind of honey will give this dish a unique taste. My favorite is the most common type - clover honey.
