Peach-Glazed Pork

1 tablespoon vegetable oil
4 (1/2-inch) pork chops (1-1/2 to 2 pounds total)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup peach preserves
2 teaspoons soy sauce
2 fresh peaches, cut into 1/2-inch slices

In a large skillet, heat the oil over medium heat. Season the pork chops with the salt and pepper, and brown for 2 to 3 minutes per side.

Add the remaining ingredients and stir until well combined. Cook for 5 to 6 more minutes, or until no pink remains in the pork chops and the peaches are tender. Serve topped with the peaches and glaze.
