Rich 'n' Creamy Fettuccine

1 pound fettuccine (see Options)
1/2 cup (1 stick) butter
2 cups (1 pint) heavy cream
1/2 teaspoon black pepper
1 cup grated Parmesan cheese

Cook the fettuccine according to the package directions; drain.

Meanwhile, in a medium skillet, melt the butter over medium-low heat and stir in the cream and pepper. Cook for 6 to 8 minutes, or until hot, stirring constantly.

Stir in the cheese; mix well and cook for 3 to 5 minutes, or until thickened. Toss with the fettuccine and serve immediately.

OPTIONS: I like to use spinach fettuccine to give this nice color contrast. Go ahead and top it with additional Parmesan cheese, if desired.
