A new study shows people are less likely to get sick because of improper food handling or preparation. The Centers for Disease Control and Prevention shows incidents of food related illnesses such as e-coli have fallen 42-percent since 1998. Local health officials say part of the reason could be due to stricter preparation standards in schools and restaurants. But officials say consumers may be more health conscious at home. Food borne illnesses are usually blamed on under cooked food, which could cause diarrhea, cramping and flu like symptoms and, in rare cases death. Environmental health professionals recommend keeping your refrigerator at 38-degrees, and cook all meats at their proper temperature.
