You may not know this, but according to the State Department of Agriculture, North Carolina ranks 15th in the nation in White or Irish potato production. But the demand for Irish potatoes is going down. Officials say not only are Americans eating less starch, but last year our state's potato farmers lost about three million dollars because the Canadian government shut its borders to potatoes produced in the United States. The Department of Agriculture says most of the top potato producing counties in our state are in Eastern Carolina.
