A local but famous face graced the set of the "Today Show" this morning: Vivian Howard from Kinston.
She's the chef at Chef & the Farmer in Kinston and the star of "A Chef's Life," a show on PBS. This morning, she appeared in a segment with Al Roker and Tamron Hall during the 9am hour, showing how to cook chicken once and create meals from it all week.
The process begins with cooking two chickens, which yielded not only chicken, but the broth as well. Howard turned that into Scarlett's Chicken and Rice, a dish named for her mom. She did veer from her mother's original dish by including butter, which she joked about during the segment on "Today."
Howard went on to prepare Chicken, Summer Squash and Basil Sauté. The segment didn't allow for her to put all her dishes together, but she displayed Tzatziki-style Chicken Salad, Black Bean Sweet Potato Soup, Broccoli Rice and Chicken Casserole. Those recipes are available on the Today Show website.
