1 20 oz. can pineapple chunks
3 tbsp of pineapple juice
1/2 cup sugar
3 tbsp all-purpose flour
1 cup shredded Cheddar cheese
1/4 cup butter, melted
1/2 cup Ritz crackers, crushed
DirectionsDrain pineapple chunks well, but keep juice.
Combine sugar and flour, then add 3 tbsp of the pineapple juice.
Add cheese and pineapple chunks and stir well.
Spoon into a greased 1 qt. casserole dish.
Combine melted butter and crushed crackers, and sprinkle over the top of the pineapple mixture.
Bake at 350 degrees for 30-35 minutes, until lightly browned.
