10-12 medium carrots, peeled and sliced
2 TBSP butter
½ cup milk
1 tsp salt
1 tsp pepper
½ cup heavy cream
2 egg yolks, lightly beaten.
1 TBSP fresh parsley, roughly chopped
In a heavy bottomed saucepan over medium low heat melt butter. Add carrots and milk, salt and pepper. Bring just to a simmer, about 15 minutes. Remove from heat. Stir in cream and egg yolks. Bring back up to temperature, but do not allow them to boil at this point – the cream will curdle and separate.
Taste for seasoning and re-season in necessary. Sprinkle with the chopped parsley.
In Ireland there is a mountain called The Mountain of Women. The top is somewhat reddish, and the mountain crest peaking over the milky mist at the bottom is supposed to look like this dish. In theory the cream with carrots peeking through looks like The Mountain of Women, or Slieve Na Mbam.
