Sesame Noodles Thursday, February 7, 2013


For the dressing:
1/2 cup peanut butter, smooth or crunchy
1/4 cup soy sauce
1/4 cup warm water
2 tablespoons freshly grated ginger
2 small garlic cloves, minced
3 tablespoons rice wine vinegar
2 tablespoons sesame oil
1 tablespoon brown sugar
1/2 to 1 teaspoon red pepper flakes

8 ounces whole grain linguine, cooked according to package directions
4 green onions, sliced on the bias, including green tops
1 red bell pepper, sliced very thinly
1 yellow pepper, sliced very thinly
2 tablespoons toasted sesame seeds

You can also add thinly sliced red or green cabbage, sweet or red onion or Swiss chard, spinach or kale


Combine all ingredients for dressing, whisking well. Toss vegetables with noodles. Poor dressing over noodles and vegetables and toss to coat. Serve hot (like my kids like), or cold (which they also like). Great for lunches.
