Peanut Butter and Jelly Muffins Friday, February 15, 2013
1 cup all purpose flour
1/3 cup brown sugar
1/2 tsp baking soda
1 tsp baking powder
¼ tsp salt
½ cup vanilla yogurt
3 TBSP creamy peanut butter
2 TBSP vegetable oil
3 TBSP jelly (strawberry or grape or even raspberry will work)
In a large bowl, combine the flour, brown sugar, baking powder, baking soda and salt. In a small mixitng bowl, beat the eggs, yogurt, peanut butter and oil on low speed until smooth. Stir into dry ingredients just until moistened. Fill paper-lined muffin tins about half full. Top each with ¾ tsp jelly and top each with remaining batter. Bake at 400 deg about 16 to 18 minutes. This will make 10 muffins.
These may also be baked in mini muffin pans. Spray or line with paper and use only ¼ tsp jelly for each. Will make 2 ½ dozen muffins. Bake at 400 deg about 10 to 12 minutes.
