Onion cheese Muffins Friday, February 22, 2013

Ingredients

2 cups all purpose flour
3 tsp baking powder
¼ tsp black pepper
dash of nutmeg
1 ¼ cups milk
¼ cup butter, melted
1 egg
¼ cup green onions, chopped
¼ cup mozzarella cheese, shredded
¼ cup Romano cheese, grated
¼ cup Parmesan cheese, shredded

Directions

In a bowl, combine the flour, baking powder, pepper and nutmeg. In another bowl, combine the milk, butter and egg. Stir into dry ingredients just until moistened. Fold in the onions and cheeses. Fill regular size sprayed muffin cups two thirds full. Bake at 400 deg for 16 to 18 minutes or until a toothpick comes out clean. Allow to cool for about 5 minutes before removing from the pan. Makes 1 dozen.
