Microwave Chocolate Cake Monday, March 11, 2013

Ingredients

1 1/2 cups all purpose flour
1 cup sugar
3 TBSP baking cocoa
1 tsp baking soda
1/4 tsp salt
1 cup cold water/ or cold brewed coffee
1/3 cup oil
1 tsp vanilla or almond flavor

Directions

Combine the dry ingredients. Combine the liquids. Stir both together till well blended. Pour into a slightly oiled 9 inch square glass or pyrex pan or small microwave fluted mold or a small microwave tube pan for a festive look.
Cook high heat (use turntable ) 6 to 8 minutes or until cake tests done in center.
Cool completely in pan. Store airtight as microwave baked goods tend to dry out faster. To serve, cut in pieces and serve with a chocolate pudding or sauce over the pieces.

Bonus:

Diet Soda Microwave Cake
1 2 layer size cake mix (use a flavor you like)
1 10 or 12 oz diet soda (use a flavor you like)

Blend together the soda and cake mix and turn into a greased microwave proof 9 inch or microwave cake pan. Cook for 6 to 8 minutes (depending on your microwave). Test for doneness by the traditional method. Allow to cool completely before turning out if you can wait that long. I first did this with a lemon cake mix and orange soda.
