1 cup uncooked Uncle Ben’s Converted Rice
2 to 3 cups shredded cabbage
2 TBSP cooking oil
1 ½ lbs lean ground beef (or country sausage)
1 medium onion, chopped
2 cans diced tomatoes
salt and pepper to taste
2 cup cheddar cheese, grated


Spray a 9x13” dish with cooking oil spray and spread the rice on the bottom. Spread cabbage evenly over the rice. In a skillet, heat the oil; fry the gound beef and onion until beef is no longer pink. Drain and spread beef over the cabbage. Sprinkle with salt and pepper. Pour tomatoes over top. Cover tightly with foil and bake in a 350 deg oven about one hour. Remove foil, sprinkle with cheese and bake an additional 15 minutes or until cheese is melted and starts to brown. Serve hot.
