Chinese 5 Spice Brownie Cookies Wednesday, February 6, 2013


½ cup butter
3 TBSP vegetable oil
2 10 oz pkg dark chocolate bits
6 eggs
1 cup brown sugar, packed
1 cup white sugar
2 tsp vanilla
1 tsp 5 spice powder
2 cups all-purpose flour
1 tsp baking powder
¼ tsp salt


In a saucepan over medium heat, combine the butter and the oil, heating until the butter has melted. Remove the pan from the heat and stir in the chocolate until the chocolate is fully melted. If necessary, you may return the pan to low heat and stirring constantly, ensure that all the chocolate is melted. Set aside. In a large bowl, whisk together the eggs, brown sugar, white sugar, vanilla and five spice powder until smooth and slightly thickened. Whisk in the chocolate-butter mixture, then stir in the flour, baking powder and salt until smooth. Cover and chill for at least 2 hours. When ready to bake, heat the oven to 350 deg. Line 2 baking sheets with parchment paper. Working in batches, scoop the dough by the TBSPful onto the parchment paper, leaving 2 inches between cookies. Bake for 10 to 12 minutes or until puffed and crackly on top. Allow to stand on the pan for a couple of minutes before transferring to a rack to cool. If necessary to bake in more than one run, replace dough in the refrigerate between pansful.
