Chimichurri Sauce for Chicken (or almost anything else that needs sauce) Thursday, August 22, 2013


1 cup fresh Italian parsley, chopped fine
1/2 cup olive oil
1/3 cup red wine vinegar
1 tsp fresh oregano, chopped fine
3 garlic cloves, peeled
3/4 tsp red pepper flakes
1 TBSP fresh lime juice
Salt and pepper to taste
2 TBSP yellow onion, minced fine


Combine the ingredients into a bowl and allow them to sit for 2 hours refrigerated. Roast, grill, poach your chicken however you like it. Use the Chimichurri as a condiment when the chicken is ready to eat. Chimichurri is a bold flavor that goes well on almost anything.
