Sausage and Penne Pasta with Feta Cheese Thursday, September 27, 2007


8 oz penne pasta, cooked and drained according to pkg directions
12 oz mild Italian sausage, bulk or removed from casings
1/4 tsp red pepper flakes
2 cups baby (or chopped) spinach (pack in the cup)
1/4 cup olives, chopped
1/4 cup fresh basil, chopped
2 TBSP olive oil
4 oz feta cheese with basil and tomatoes, crumbled
salt to taste


In a large skillet, heat the oil. Cook the sausage, crumbling until all color is gone. Stir in red pepper flakes. Stir drained penne into sausage with the greens, olives, and basil. Toss gently until greens are just wilted. Stir in feta. Taste and add salt if necessary. Toss again and serve.
