It is impossible to give you a recipe for these great potatoes except to tell you to go to Dollywood to get them. However, you can get the same good taste by doing home made potato chips and devising your own flavoring add ons. To make potato chips, slice the potatoes crosswise as thin as possible. I use the #1 blade on the Cusineart to do this. Soak the potatoes in cold water until you are ready to fry them. Drain and pat the potato slices dry. Drop individually into hot oil at least 1 inch deep. Do not crowd them in the oil. Allow to fry until they start to brown around the edges. Turn and allow to cook until they are brown. Lift out with a slotted spoon and place on paper towels to drain. Sprinkle with Lowrey’s Season Salt. Or a mixture of chili powder. Or a mixture of salt and ground black pepper. Or use your imagination as to what you might like best.
