Healthy Morning Muffins Wednesday, February 10, 2010


1 1/4 cups plain flour
1/2 cup light brown sugar
1/2 tsp each, baking soda and baking powder
1/2 tsp nutmeg
1/2 tsp salt
1 cup old fashioned oatmeal
3 TBSP cooking oil
1 egg
1/3 cup milk
2 medium carrots, peeled and shredded
1 medium sized ripe banana, mashed


Preheat oven to 400 deg. Coat a 12 cup muffin tin with baking spray. In a large bowl mix together all dry ingredients thoroughly. Stir in oats. Mix oil, egg, milk, banana and carrots and add to dry ingredients. Stir until just blended. Fill each muffin cup with about ¼ cup batter. Bake about 20 to 25 minutes or until lightly browned and a toothpick inserted into the center of the muffin comes out clean. These are good warm or cold.
