Blueberry Oatmeal Muffins Thursday, January 14, 2010


3 cups biscuit mix
1/2 cup brown sugar
1/4 cup oatmeal
1 tsp ground cinnamon
1/4 cup butter
2 eggs
1 1/2 cups milk
2 cups blueberries


Preheat oven to 400 deg and spray muffin tins with baking spray. Combine biscuit mix, brown sugar, oatmeal, and cinnamon. Melt butter. Beat eggs thoroughly, then mix with milk and melted butter. Pour liquid ingredients all at once into dry ones. Stir just until blended, then gently blend in blueberries. Pour or spoon batter into muffin tins filling about 2/3 full. Bake about 15 to 20 minutes or until nicely browned. Remove from tins and allow to cool a short time on a rack before serving. In case you are keeping track, both the oatmeal and the blueberries count as super foods.
