Centennial Muffins Tuesday, January 12, 2010
First done on the anniversary of having done 100 shows. That was March 23, 1991. This recipe is from a cookbook published in Knoxville in 1900. Now that has been a long time.
2 cups cornmeal (not cornmeal mix but cornmeal)
1 cup plain flour
2 cups buttermilk
2 TBSP melted butter
1 TBSP sugar
1 tsp each, soda and salt
2 tsp baking powder (originally this was cream of tartar)
Mix all dry ingredients and make a well in the center. Beat together the milk and eggs. Pour into the well and stir just to mix. Beat in the butter. Pour into greased muffin tins and bake in a preheated 425 deg oven about 20 minutes or until brown. Serve hot.
