Skillet Cookies Tuesday, December 15, 2009


1 egg beaten
1 cup sugar
1 stick butter
1/2 lb chopped dates
1/2 cup pecans, chopped
2 cups crisp rice cereal
2 cups coconut, approx


In a large, heavy skillet, melt butter and beat in sugar, pecans, egg and dates. Cook over medium heat, stirring constantly, about 10 minutes or until thick. Remove from heat and allow to cool slightly. Stir in rice cereal. While still warm, work quickly to shape into 1 inch balls and roll in coconut. Store in a tightly covered tin.
