Curried New Potato Salad Monday, May 14, 2007


2 lbs new potatoes, red or white
3/4 cup plain yogurt
1/4 cup mayonnaise
2 tsp curry powder
1 stalk celery, diced
1/3 cup green bell pepper, diced
1/2 cup onion, diced
1 TBSP lemon juice
2 tsp salt, or to taste, divided


In a large pot of water, place potatoes and 1 tsp salt and bring to a full boil. Reduce heat and cook about 20 minutes or potatoes are just tender. Drain and allow to cool. When potatoes are cool, mix all remaining ingredients in a large bowl. Cut cooled potatoes into about 1" pieces. Add potatoes to yogurt mixture and toss gently to completely coat potatoes.
