Ham Bone Vegetable Soup Thursday, April 12, 2007


Bone from ½ half prepared ham with some meat left on
1 onion and 1 carrot coarsely chopped
2 carrots, peeled and sliced
3 potatoes, peeled and cubed
2 stalks celery, cut into 1" pieces
1 15 oz can diced tomatoes, undrained
1 medium onion, peeled and coarsely chopped
salt and pepper to taste


Place ham bone in a large soup pot with onion and carrot. Add water to cover. Bring to a boil. Reduce heat and simmer until meat is falling from the bone. Remove bone, onion and carrot. Remove any remaining meat from the bone and return meat to pot. Add vegetables and cook until potatoes are tender. Add salt and pepper to taste and serve hot with some good cornbread
