Quick Toffee Cookies Friday, November 6, 2009
1/2 cup butter
1 yellow cake mix (pudding added kind)
1 TBSP waters
1 8 oz pkg bits-o-brickle chips
1 cup pecans, chopped
With a mixer, beat butter until soft. Add cake mix, eggs, and water. Beat until fully mixed. Stir in brickle chips and nuts completely. Drop by generous teaspoonfuls onto an ungreased cookie sheet. Bake at 350 deg for 8 to 10 minutes or until lightly browned. Allow to cool on the sheet for a couple of minutes before removing to a rack to cool completely. These are nice when they are first baked. They are better if the stand for a day in a tightly closed container.
