Ingredients

Judy Gerhardt

1 cup boiling water
3 slices “old” bread
3/4 cup milk (approx)
1 medium onion, chopped
1/4 to 1/2 cup bell pepper, chopped
1/4 to 1/2 cup mushrooms, chopped
½ cup catsup
1 egg, beaten
1/2 tsp salt
sprinkle black pepper
1 lb lean ground beef

Directions

Heat water to boiling to be used later. .Keep it hot!! In a large bowl crumble (finely) "old" bread- it's easier to crumble. Add milk enough to saturate the bread - you want it all absorbed. [I found that about 3/4 cup worked fine, but you may need more or less depending on how “old” your bread is.] Add chopped onion, chopped green pepper, chopped mushrooms, catsup, egg, salt and black pepper. Mix well and add ground beef. To mix this you'll probably have to give up the spoon and get in there with your hands. Place mixture in a mound (any shape you want) in the iron skillet and pour boiling water around it - a little more than to cover the bottom of the skillet. Bake at 375 degrees for 40 minutes - at this point if you wish - on top of the meat loaf you may make a nice design with catsup and cook 5 more minutes. Remove from the skillet and enjoy!! I usually cut it into 1/4's and slide a spatula under each part to get it out of the skillet. It will fall apart but it sure tastes good.
