4 large red potatoes
4 cups coarsely chopped cabbage (about ½ head)
2 medium apples, peeled, cored and sliced
8 oz sauerkraut, drained
1 lb Polish Sausage
Salt & pepper to taste
Quarter potatoes. Season with salt and pepper and place in large pan with enough water to cover them. Place cabbage on top of potatoes and salt and pepper lightly. Layer apple slices over cabbage. Spread kraut over apples. Cut polish sausage in 8 (or more) pieces, place on top of cabbage. Bring to boil. Cover and simmer until cabbage & potatoes are done. You will definitely need to make cornbread to serve with this.
