I first did this recipe on April 30, 1990. I got it from Judy McKenzie who is a real estate tycoon now. It is still a good one.
4 TBSP butter
1 cup flour
1 cup milk
1 tsp salt
1 tsp baking powder
1 lb cheese, grated (Monterey Jack, Cheddar or a mixture)
2 10 oz pkg frozen chopped spinach, defrosted and squeezed dry
Preheat oven to 350 deg. Melt butter in a 9x13" pan in the oven. Remove from oven. Beat together eggs, flour, milk, salt, and baking powder thoroughly. Add cheese and well drained spinach. Mix well and pour into buttered pan. Bake 30 to 35 minutes or until it feels firm in the center. Allow to cool 10 to 15 minutes and cut out into 1" squares.
