Triple Bean Pork Tuesday, February 13, 2007


1 lb lean pork (cubed and cooked)
2 TBSP vegetable oil
1 cup celery (sliced thin)
1 cup onion (chopped)
4 oz sliced mushrooms
1 cup bell pepper (chopped)
1 clove of garlic (minced)
1 can pork & beans, undrained (16oz)
1 can light red kidney beans, undrained (16oz)
1 can black beans, drained and rinsed
1 can tomato paste (6oz)
1 tsp salt ( to taste)
1 tsp black pepper


Heat the oil in a heavy skillet. Add the celery, onion, mushrooms, peppers and the garlic. Saute until tender then stir in the meat and the rest of the ingredients, blending well. Cover and simmer over low heat 45 min to an hour. This is nice served with some good corn bread or even corn muffins
