Long Life Noodles with Shrimp Friday, February 9, 2007


8 oz Chinese noodles
1 lb shrimp, peeled
6 to 8 oz pea pods
2 to 3 TBSP green onions, sliced
1 TBSP cooking oil
1 cup chicken stock
1 TBSP cornstarch
salt to taste


Cook the noodles according to package directions. Since it is New Years, do not break them. The long noodles signify long life. Drain and place in an attractive serving dish. In a non stick skillet, heat oil and add shrimp. Stir fry until they just turn pink. Remove from pan. Add pea pods and onions and stir fry about 1 minute. Mix cornstarch into chicken stock and stir into vegetables until the mixture boils and thickens. Stir in shrimp, salt to taste and pour over noodles. Serve at once.

Shrimp are served at New Years in South China because the name of them sounds like a word signifying good luck.
