Coconut Impossible Pie Tuesday, August 18, 2009

Ingredients

4 eggs
1 3/4 cups sugar
2 cups milk
1 cup flake coconut
1/2 cup baking mix
1 tsp vanilla


Directions

Beat together the eggs and sugar. Blend in the baking mix. Beat in the milk and vanilla until completely mixed.

Pour the coconut into a greased 9 inch pie pan and spread flat. Pour the baking mix mixture over the coconut.

Bake in a preheated 350 deg oven about 45 minutes or until lightly brown.
