Festive Tortilla Roll Ups Wednesday, January 24, 2007


8 oz cream cheese, softened
1 cup cheddar cheese, shredded
2 green onions, sliced thin
1/2 cup finely chopped bell peppers (red and green)
2 TBSP parsley (optional)
3/4 cup salsa, drained
1/2 cup feta cheese
4 TBSP Parmesan cheese
4 large tortillas


Blend all ingredients together, except tortilla shells. Spread on shells, roll up (jelly roll style) and wrap in plastic wrap. Put in fridge for two hours or overnight. Cut into slices and enjoy.
