Spinach with Black Eyed Peas Thursday, December 28, 2006


2 10 oz pkg frozen chopped spinach
1/2 cup bulgur wheat #2, soaked 20 minutes
2 TBSP olive oil
1 tsp salt
Pepper to taste
1 cup dried black-eyed peas ( or 1 15 oz can, drained)
1 onion, minced


Remove spinach from box and place in a microwave safe bowl. Cook about 5 or 6 minutes or until completely thawed and hot to the touch. Squeeze out as much water as possible. Toss with bulgur wheat. Cook black-eyed peas until well done but still firm. Drain and set aside. Brown onion in oil. Add peas, mix well. Add to spinach and wheat (bulgur). Add salt and pepper to taste. If you are using canned peas, heat them just to boiling and drain thoroughly before tossing with the bulgur.
