3 TBSP olive oil
1 1/2 cups Uncle Ben’s converted rice
2 cups water
2 10 oz pkg frozen chopped spinach, thawed
salt to taste
Heat olive oil in a heavy pan with a good lid. Add rice and cook, stirring constantly, until the rice starts to brown. Add water, stir and cover. Allow to cook about 15 minutes. While the rice is cooking, squeeze as much water as possible out of the spinach. Stir spinach into the rice and bring back to a simmer. Cover and cook an additional 5 to 7 minutes. Remove from heat and allow to stand 5 minutes before serving. Add salt to taste.
