Ginger Bran Muffins Thursday, July 9, 2009

See how little things change in 20 years!!!!

2 cups all bran cereal
1 1/4 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 cup egg substitute
1 cup buttermilk
2 TBSP fresh ginger, peeled and grated fine
1/4 cup vegetable oil


Mix cereal with buttermilk and allow to stand about 5 minutes to soften. Beat the egg substitute and ginger into the buttermilk mixture. Mix the flour, soda, and salt. Add the oil and the buttermilk mixture and mix just to moisten. Do not overbeat. Spoon into pregreased muffin tins and bake in a 350 deg oven about 20 to 25 minutes or until brown. Serve hot.
