Potato Latke Monday, December 18, 2006


4 large potatoes, peeled and grated
1 medium onion, peeled and grated
½ to 1 tsp salt
1 tsp baking powder
4 TBSP plain flour
2 eggs, beaten
oil for frying


Mix the potatoes and onions. Squeeze and drain the mixture to remove any excess moisture. Mix in all remaining ingredients (except oil) and blend well. Heat about ½ inch oil in a heavy skillet. Drop potato mixture into hot oil by tablespoonfuls and fry until brown on bottom. Turn and cook other side until crisp and brown. Serve hot with sour cream and applesauce.
