Cheeseburger Pie Tuesday, June 23, 2009

3/4 lb lean ground beef
1/2 cup onion, chopped
1 cup cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1/2 tsp salt
1/8 tsp pepper
3/4 cup mayo
3/4 cup milk
4 tsp corn starch
3 eggs


Cook beef and onion until meat has lost its color, drain and set aside. Mix cheddar and Monterey Jack cheese and set aside. Use a hand mixer to thoroughly mix all remaining ingredients. In a 9” deep dish unbaked pie shell spread beef mixture and top with cheese mixture. Pour liquid evenly over all. Place on a foil covered baking sheet (to catch spills) and bake at 350 deg for 25 to 30 minutes or until puffed and brown. Allow to cool a little before serving.
