Vanilla Pound Cake Friday, May, 29, 2009


1 cup shortening
2 cups sugar
4 eggs
2 TBSP vanilla (yes, that is right)
3 cups plain flour
1 tsp baking powder
1/2 tsp baking soda
1 cup buttermilk


Cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each egg. Beat in vanilla. Combine flour, baking powder and soda. Add to creamed mixture alternately with buttermilk. Pour into a greased and floured, or sprayed with baking spray, fluted tube pan. Bake at 350 deg about 55 to 60 minutes or until cake tests done. Allow to cool a few minutes before turning out onto a wire rack to cool completely.

1 cup confections sugar
1 to 2 TBSP milk
½ tsp vanilla

Combine glaze ingredients and drizzle over cooled cake.

This cake is very strong with vanilla. It is perfect to have with fresh berries or fruits all summer.
