Strawberry Bread Thursday, May 14, 2009


A recipe from our friend Dan Pyne

1/2 cup butter
3/4 cup sugar
3 large eggs
1 tsp vanilla
2 cups plain flour
1/2 tsp baking powder
1/2 tsp soda
1/4 tsp salt
1 tsp cinnamon
1/2 cup sour cream or plain yogurt
1/2 cup toasted walnuts or pecans, coarsely chopped
1 1/2 cup chopped fresh strawberries
1 tsp lemon juice


Preheat oven to 350 deg. Spray a 9x5x3 inch loaf pan. Pour lemon juice over strawberries and set aside. Beat butter until softened. Add sugar and continue to beat until light and fluffy. Add eggs, one at a time, beating will after each egg. Beat in the vanilla. Whisk together the dry ingredients. With the mixer on low, add the flour mixture alternately with the sour cream (or yogurt) beginning and ending with dry mixture. Fold in strawberries and nuts. Turn into prepared loaf pan and bake about an hour or until bread is brown and tests done. Allow to cool on a wire rack before turning out of the pan. Serve warm or at room temperature.
