Cheddar Pepper Muffins Friday, October 27, 2006


2 cups flour
1 TBSP sugar
1 TBSP baking powder
1 tsp black pepper, coarsely cracked
1/2 tsp salt
1 1/4 cups milk
1/4 cup vegetable oil
1 egg
1 cup cheddar cheese, shredded


Preheat oven to 400 deg. Generously grease 12 muffin cups. In large bowl, combine dry ingredients. In small bowl, combine milk, oil and egg until blended. Stir into flour mix just until blended. Fold in 3/4 cup of the cheese. Spoon into 12 greased muffin cups. Sprinkle with remaining cheese. Bake for 15-20 minutes or until light golden brown. Let cool in pan on wire rack for 5 minutes. Remove from pan and serve warm.
