2 cups self rising flour, sifted
1/3 cup sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup applesauce
1/2 cup milk
3 TBSP vegetable oil
Preheat oven to 425 deg. Grease muffin cups. Stir together flour, sugar, cinnamon, and nutmeg in mixing bowl. Beat egg in separate bowl; stir in applesauce, milk, and oil. Add liquid mixture to dry ingredients, stirring just until blended. Batter will be slightly lumpy. Spoon batter into prepared muffin cups, filling each 2/3 full. Bake for 18 to 20 minutes or until golden brown.
NOTE: If using all purpose flour, stir 1 TBSP baking powder and 3/4 tsp salt with flour.
