Vidalia Onion Pie Friday, May 8, 2009


1 cup saltine cracker crumbs
5 TBSP butter, melted
2 1/2 cups thinly sliced Vidalia onions
1 TBSP cooking oil
2 eggs
3/4 cup milk
1/2 cup cheddar cheese
Salt and pepper to taste


Combine cracker crumbs with butter and press into an 8” or 9” pie pan. Bake at 350 deg for 8 to 10 minutes. Put oil into an heavy skillet and heat. Add onion and cook stirring constantly over high heat until soft and lightly browned. Turn into baked pie shell. Sprinkle cheese evenly over top. Beat together remaining ingredients and pour over onions. Bake at 350 deg about 45 minutes or until nicely browned.
