Blueberry Pancakes Wednesday, May 6, 2009


1 cup plain flour
1/2 cup graham cracker crumbs
1 TBSP sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 eggs, lightly beaten
1 1/4 cups buttermilk
1/4 cup butter, melted
1 cup fresh blueberries


Combine flour, cracker crumbs, sugar, baking powder, baking soda and salt. Combine eggs, buttermilk and butter. Add to dry ingredients and stir just to mix. Do not over beat. Fold in blueberries. Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top. Cook until second side is golden brown.

You can make a nice topping for these by mixing 3 oz softened cream cheese with 1 cup whipped topping. Spread on hot pancakes. Some maple syrup is not bad poured over that.
